Writing Intensive Course Information

This introductory course for non-majors provides a transdisciplinary approach to nutrition, considering anthropological, physiological, geographical, socioeconomic and psychological elements in world nutrition. These ideas will be explored in the context of cuisines and cultures that are found in the US but originate elsewhere. The writing intensive nature of this course allows for students to critically examine and communicate concepts related to food and culture. Students are given substantial feedback during the course to help improve both their thinking and writing skills.

Native American Tribes Paper
For this assignment you will build on the knowledge you gained from the book regarding Native American tribes. You will write a 5 page paper describing the changes in food culture of one tribe from each of three different geographical regions. I would like you to write about the historical food culture, specific events that might have changed the food culture, what the current food culture looks like and why, and any disease or health related issues that the tribes are facing in your analysis that are a result of the changes in food culture over time. I also want you to include a synthesis section that compares and contrasts the historical and modern food cultures of the three tribes (this can be in your conclusion).

Obesity and Diabetes Paper
For this assignment, you will write a 5 page paper covering the relationship of diet/exercise with obesity and diabetes in two of the cultures described in the textbook. You MAY NOT use Native Americans or Amish as cultures for this paper.

Your paper should include the following subsections for each of your selected cultures:

history of the culture related to obesity and diabetes (including traditional eating habits and exercise levels),
what are the current issues related to obesity and diabetes faced by the culture (specifically related to food habits and exercise),
what are some of the issues that may be issues for the culture in the future (specifically related to food habits and exercise)
In addition, you will synthesize the material you cover and discuss whether the cultures share similar backgrounds, present situations, or possible future situations and how that might factor into similar or disparate rates of obesity.

You will be required to use a minimum of five references, including the textbook, and should use APA style for your references.

You will be graded specifically on addressing the required content (above), use of proper grammar and spelling, and general writing quality.

Note: For the "future issues" section, please be descriptive and specific. We are looking for more than just "things will get worse".

Please check the rubric, including the "longer description" sections. Points will be awarded based on answering those questions. Also, please use headings - it really does make it easier to grade.

Magazine Advertisement Assignment (15 pts)
Look through two different magazines for nutrition or health-related advertisements. What are the physical attributes of the people or other characters in the ads? Are there other obvious messages in the visuals of the ad that would appeal more to one cultural group than to another (and why do you think so)? Please include the name and a brief description of each magazine. Also, describe what you perceive as the differences in the targeted audiences between the two magazines and how you might alter the ads to reach a more heterogeneous audience. Please answer the questions in paragraph format and turn in pictures of the ads with your assignment.
You will be scored on how well you address all the points above as well as on using correct grammar and spelling. Your paper should be 1-2 pages in length, double-spaced, 10 or 12 point font.
Notes: Cigarette (including e-cigarettes), weight loss supplement and beauty related ads will not be accepted for this assignment. The ads MUST relate to nutrition, whole body health, or exercise. If you have questions about your ad – run it by me first.

Final Essay #1 Middle Eastern Religion Assignment (25 pts)
For this assignment you will write a two page paper where you will identify and describe three religions that are currently represented in the Middle Eastern countries identified by our book. For each religion, I would like for you to briefly describe how that religion influences the food culture by describing a meal or dish that conforms to that religion and the role it plays in life (daily or special occasion). I would like you to consider which ingredients are included and how they relate to the food culture. (It is acceptable to use a meal that you describe in the Holiday Meal assignment but you must incorporate it in appropriately).
You will be scored on how well you address all the points above as well as on using correct grammar and spelling. Your paper should be 2-3 pages in length, double-spaced, 10 or 12 point font. You should include references in approved class formats (MLA or APA - points will be deducted if you do not use one of these formats). There are no required number of references, but at least the textbook must be cited.

Final Essay #2 Low Obesity Culture Assignment (25 pts)
For this assignment I want you to explore and describe a low obesity culture in more depth. You can pick one culture (or country) that we have discussed this semester and use that as the focus of this assignment. I would like for you to discuss 1) the rates of obesity in this culture, 2) how the culture/food culture contributes to the low rates of obesity, and 3) how you think some of the cultural norms could be integrated into a generic high obesity culture to help improve their rates of obesity.
You will be scored on how well you address all the points above as well as on using correct grammar and spelling. Your paper should be 2-3 pages in length, double-spaced, 10 or 12 point font. You should include references in approved class formats (MLA or APA - points will be deducted if you do not use one of these formats). There are no required number of references, but at least the textbook must be cited.

Final Essay #3 Family Meal Structure
For this assignment you will explore the dynamics of a family meal (not a formal/event dinner). I would like for you to define and describe two family meal structures (one each from two different cultures). Think back to our first assignment this semester. Who is present? What is the etiquette used? Is their a hierarchy to the meal? Who has roles in planning, implementing or cleaning up the meal? Do not limit yourself to only these questions - I am using them to get you to think about the dynamics that exist. How are the two meal structures you described similar or different? Why?
You will be scored on how well you address all the points above as well as on using correct grammar and spelling. Your paper should be 2-3 pages in length, double-spaced, 10 or 12 point font. You should include references in approved class formats (MLA or APA - points will be deducted if you do not use one of these formats). There are no required number of references, but at least the textbook must be cited.

Final Essay #4 The Human Lens
For this assignment, I want you to go in a different direction than the previous three papers. I want you to write a reflective paper about your perspective on food culture (whether it be American or from another country or culture). How do you think your personal experiences influenced your ideas while reading about different cultures in the book? Our book is written from a more Americanized lens, but we each bring our own experiences into anything we learn. Were there some things presented in a way that was different from your own experiences? I would like you to pick three cultures or aspects of cultures that you either related to, were confused by, or actively disliked. What was it that evoked the reaction? No rubric for this paper for sure - this is a platform for you to share some things that really impacted you during the course of the semester.

There is a "warm-up" writing assignment before these two longer papers (2-3 pages) that they get feedback on but are not allowed revisions. In addition, the final project for this course includes four critical thinking essays (2-3 pages each).

The assignments for this course are based on course content but are designed to engage the students in a more global way. They are required to use external sources to answer questions related to food and culture of various geographical or ethnic groups that arise from the textbook. In all writing situations, students pick their own specific groups to discuss, must critically examine those cultures or groups in response to specific prompts and must support their ideas and assertions using citations.
I start with a shorter paper that allows them to get feedback and understand what I'm looking for. There are various non-writing assignments mixed in. The two large papers are in the middle of the semester. This allows them to be able to write and revise before finals week. There are additional assignments that are not writing intensive but focus on critical thinking and then the semester ends with four essays (2-3 pages each) on topics related to the course that tie in material we have learned with externally obtained information and, in one case, a personal reflection over content in the course.
